Ingredients
1 cup dried apricots
1 cup pitted dates
1 cup walnuts
1 cup raw cashews
1 tablespoon matcha, sifted
¼ teaspoon kosher salt
1 cup goji berries or golden raisins
½ cup roasted and salted sunflower seeds
Line an 8-inch square baking pan with parchment paper, letting the paper hang over two of the sides.
Combine the apricotsm, dates, walnuts, cashews, matcha, and salt in a food processor and pulse until all the ingredients are finely chopped and evenly mixed. Add the goji berries and sunflower seeds and pulse just enough to combine.
Scrape the mixture into the prepared pan and flatten evenly over the bottom. Refrigerate until set, at least 1 hour.
Use the parchement paper to transfer the flattened mixture onto a cutting board, then cut into 1-inch squares or traingles. Wrap each square in plastic wrap or seal them in a plastic bag. The bars will keepfor up to 2 weeks in the refrigerator.
